I don’t know about you, but there is nothing I love more than snuggling up with a mug of hot chocolate on a cold winter day. Whether it’s following countless runs down the sledding hill, shoveling at the tail end of a nor’easter, or while curling up to watch your favorite holiday movie, hot chocolate is always the best way to warm you up and fill your heart with happiness. If I’m being completely honest, I’m pretty sure my participation in outdoor winter activities is only as a means to get the hot chocolate that will surely follow.
Happy Thanksgiving Eve, friends! There really isn’t much I love more than a day dedicated to delicious food, so you better believe Thanksgiving is one of my favorite holidays. When it comes to desserts on this special day, pumpkin pie is where it’s at in my book. And while I could probably happily eat a slice of pumpkin pie everyday of my life, this pumpkin pie oatmeal is a delicious and hearty alternative.
The first time I tested this recipe it was over 85* outside. So, as I waited anxiously for them to come out of the oven, while sweating profusely, you could imagine my disappointment when they didn't turn out the way I had envisioned. At that point, however, I was determined to get it right. So, two days later I set out to re-test the recipe with the outside temperature being only slightly cooler at 80*. When that second batch didn't turn out, I was about ready to throw in my sweaty towel!
