Now that the school year is back in full swing, breakfasts that are quick, simple, preferably able to be prepped the night before, yet nutritious, are once again a necessity in my life. Well friends, overnight oats are the perfect solution, but these aren't just any overnight oats. These Back to School Overnight Oats combine seasonal ingredients that not only taste delicious, but are a nutrition powerhouse!

Back to School Overnight Oats
In a mason jar (the 16 oz wide mouth mason jars are perfect for a single serving), combine half of the oats, chia seeds, and cinnamon. Put the other half in a second mason jar.
Top each mason jar with half of the cranberries, coconut flakes, pumpkin seeds, and Greek yogurt. Stir all the ingredients together.
Cut the apple into small chunks and divide evenly between the two jars.
Pour half of the almond milk over each jar. Either stir or shake each jar to fully combine all the ingredients.
Let sit overnight in the fridge to thicken and soften the oats.
If you'd like your oats to be a bit sweeter, add half of the maple syrup to each jar the next morning. Enjoy!
I cup rolled oats
2 tablespoons chia seeds
1/2 teaspoon cinnamon
1 small apple
2 tablespoons dried cranberries
2 tablespoons coconut flakes
2 tablespoons pumpkin seeds
2 tablespoons vanilla Greek yogurt
2 cups almond milk
2 tablespoons maple syrup (optional)
