Mint Cacao Smoothie & Chia Seed Pudding Parfait


Happy Tuesday, friends! I've made you another parfait and it's the perfect breakfast or snack for cooling down on a hot summer day! It's a take on one of my favorite flavor combos, mint chocolate chip, but instead of chocolate chips, I used cacao nibs. That combined with a bit of fresh mint and Amazing Grass® Green SuperFood®, creates one winning combination!


Just look at that thickness! Gah- I love it!

Have you had the mint chocolate R.e.d.d. Bar? It tastes like a freakin' Thin Mint cookie, making the former girl scout in me want to do a happy dance!


Mint Cacao Smoothie & Chia Seed Pudding Parfait

Serves 2-4


Chia Seed Pudding-

1 cup almond milk

1/3 cup chia seeds

1 tablespoon maple syrup (optional)

Mint Cacao Smoothie-

1/2 cup frozen cauliflower

1/2 frozen banana

5 fresh mint leaves

1/4 cup cacao nibs

1 packet of Amazing Grass® Green SuperFood® Detox & Digest

1 cup almond milk


The night before, prep the chia seed pudding by combining the almond milk, chia seeds, and maple syrup in a mason jar. Let sit overnight in the fridge to thicken. 

The next morning, prepare your smoothie by combining the cauliflower, banana, mint leaves, half of the cacao nibs, and the packet of Amazing Grass® Green SuperFood® with the almond milk in your blender. Blend until smooth. 

To create your parfait, layer the chia seed pudding and smoothie in a mason jar. As always, you can also just dump it all in a bowl and call it good! 

Top with a mint chocolate R.e.d.d. Bar, the leftover cacao nibs, and a couple of fresh mint leaves. Enjoy!

Notes: Feel free to add a tablespoon of unsweetened cocoa powder or a scoop of chocolate protein powder for even more of a chocolatey flavor.
